Mauritian Flag Sweet Polenta Pudding - Poudine Mais

Yesterday, we had a potluck to celebrate the Independance day of Mauritius for the Mauritians living in the bay area. I decided to cook something easy - sweet polenta pudding. It's a very common traditional sweet snack in Mauritius. Usually we don't add color to it, and it's yellow and plain. I decided to make it in the colors of our Mauritian flag. Making the pudding is very easy. Basically, boil some cornmeal, add some milk to it until it reaches a good thick consitency, then just add sugar, coconut and soaked raisins to it and let it set.

Italian-Japanese homemade Sushi Rolls !

Yesterday night, japanese food was on the menu and decided to make some vegetarian sushi rolls - Cucumber, Pickled Red Ginger, Mint, Watercress and Wasabi - but wanted to add a lil bit of kick/novelty to it and added some pasta sauce to the ingredients before rolling and the sauce blended in EXCELLENT with everything else ! Pasta sauce goes super good in a sushi roll making for good Italian Japanese Fusion ! Try it out !!

Lahori Fish Bites

Decided to try something new tonight for dinner and got some pakistani fish spices and cooked this Lahori Fish. Was pretty easy as it was pre-packacged Shaan Spices. Just had to make a batter out of the spices, marinate fish for one hour or so and then fry it. Came out very tasty and crispy. Love it !

Japanese Curry Dinner..

Thai Green Curry Tuna Croissants

Easy to cook and very delicious. 5 mins prep, 10 mins bake.. and u got yourself an excellent appetizer.

Sunday Green Dumplings

I had a craving for dumplings today and decided to make some - usually chinese dumplings are made with ground pork meat (more fatty). Decided to use ground turkey instead though.. not too bad of a substitute. Mixed the ground meat with ground garlic and ginger, salt, chives and thyme.. then added my own special ingredient to it (non-chinese) - grated chayotte. The chayotte provides lots of moisture and mushy feeling to the dumplings. Perfect compliment in any dumpling I personally think. I steamed half of it and fried half of it.

Japanese Potato,Carrot & Chicen Curry, Squashed Squash and Ahi Tuna Sushi Roll

Had not cooked Japanese in a while and this week, I decided to cook some Japanese food. I really like Japanese Curry. It's so different from Indian or Thai Curries. It's very thick, extra starchy and a bit sweet. I cooked a potato, carrot and chicken curry and Squashed Japanese Squash and cucumber and mango salad (not japanese). I also attempted to make some sushi rolls with some fresh Ahi Tuna I bought, but it did not come out as good as I wanted it to.. taste was not bad.. but presentation was a disaster !

Divali Sweet and Savory...Boondi Laddoo and Taro Root Fritters.

As it's divali today and the custom back in Mauritius, is we cook sweets and share with friends and family. I decided to cook some boondi laddoos and some taro root fritters (Gato Arouille in Creole). My laddoos look a bit reddish in color, because red food color was at hand's reach when I was mixing.. fortunately my blue or green food colors were tucked in far behind in the closet.. otherwise, it'd have been funny to see some multicolored laddoos.

Both are relatively easy to cook, but so much preparation and stuff.

For Laddoo, first I had to make the syrup by boiling sugar in water and let it cool down. Then make the batter with Besan (split peas) and water. Fry it in tiny little specks. Then dip the fry specks in the cold syrup and after dipping for a bit, take them out, crush them, add almonds and make small balls and finally it's ready to eat :)

For the Taro Fritters, a bit less work, remove hard skin from Taro Root.. then julienne cut the taro in long uniform thin strands. After that, add ginger/garlic paste to the strands, a little of corn starch and some soy sauce, make balls and fry and then eat :)

Cumin Rice, Sauteed Chinese Grean Beans, Stewed Chayotte & Watercress Salad

Went to the farmer's market at Alemany Boulevard this morning for the first time and bought a whole bunch of vegetables.

So, dinner tonight was all vegetarian. Cumin Rice, Sauteed Chinese Grean Beans with garlic, ginger and onions, Stewed Chayotte & Watercress Salad. 

Simple, but delicious. 

I've always been having some kind of meat with my dinner.. Eliminating meat with good veggies options is not too bad.

Cooked today for the first time after 3 months !!

Today I did not want to eat out yet again. I have been only eating out for the past 3 months. So, decided to hit the grocery store, use the hostel kitchen and cook myself a nice Chicken Curry with Peruvian potatoes and Chilli. Came out pretty good and goes good with Peruvian loaf.
