Japanese Curry Dinner..
Had a couple of friends over for dinner last week and again cooked a nice japanese curry and smashed kombucha and mango, cucumber and pomegranate salad.

Had not cooked Japanese in a while and this week, I decided to cook some Japanese food. I really like Japanese Curry. It's so different from Indian or Thai Curries. It's very thick, extra starchy and a bit sweet. I cooked a potato, carrot and chicken curry and Squashed Japanese Squash and cucumber and mango salad (not japanese). I also attempted to make some sushi rolls with some fresh Ahi Tuna I bought, but it did not come out as good as I wanted it to.. taste was not bad.. but presentation was a disaster !
Marinated some chicken in Garam Massala and some sesame vinaigrette dressing the day before and lightly cooked them in some cooking spray. It came out nice and dry and very spicy. Added up some carrots, String Green Beans and Pearl Onions to it at the end and here's the result. I've gotten back in the cooking groove these days and been trying and experimenting many new dishes.
At the beginning of the week I boiled some chicken with rosemary, thyme, peal onions and then shredded them. Since then, I have been finding creative ways to use my shredded chicken ;) Today I used them on crakers and made this. I put a dib of shrimp chili paste (the one where u have little tiny shrimps in it) on a saltine cracker, put a few pieces of shredded peppered chicken, then a big dab of red fire roasted red pepper and eggplant spread with chinese chives on top..
Tonight I had the hottest ever dish in my life - Chicken with Explosive Chili Peppers at the Z & Y Schezuan Chinese restaurant in San Francisco Chinatown. I think it had more peppers than chicken - very tasty though. I can't wait to try all the other hot schezuan specialities at Z & Y.
I have not cooked in a long while. I decided to chill at home todya, take it easy and cook some fresh shanghai noodles with chicken, eggs and spinach. Came out pretty good.
